Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a 10 to 12-inch oven-safe skillet, melt unsalted butter over medium heat. Once bubbling, add minced garlic and sauté for about 1 minute until fragrant.
  3. Add spinach to the skillet, stirring continuously until it wilts down, about 3-4 minutes. Season with salt and pepper.
  4. Reduce heat to low and stir in heavy cream, lemon zest, lemon juice, and nutmeg. Let it simmer gently for 2-3 minutes.
  5. Mix in Parmesan cheese, allowing it to melt while stirring. Adjust seasoning if necessary.
  6. Create wells in the spinach mixture and crack an egg into each well. Season eggs lightly with salt and pepper.
  7. Sprinkle additional Parmesan cheese over the skillet, avoiding the egg yolks.
  8. Bake for 12-15 minutes until egg whites are firm and yolks jiggle slightly.
  9. Remove from oven and let it rest for a few minutes before serving.
