Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line baking sheets with parchment paper.
  2. Peel, seed, and cube the butternut squash. Toss with olive oil, salt, and pepper. Spread on one baking sheet.
  3. Prepare the Brussels sprouts by trimming and halving them. Toss with olive oil, salt, and pepper, and add to a separate baking sheet after 15 minutes of roasting squash.
  4. While the veggies roast, heat olive oil in a skillet. Slice the sausage and cook in the skillet until crispy and golden brown, about 4 minutes per side.
  5. Combine the roasted squash and Brussels sprouts in the skillet with the sausage. Adjust seasoning as needed.
  6. Serve warm, garnished with fresh thyme.
