Step-by-Step Instructions
- Preheat your oven to 375°F (190°C) and prepare the crust by fitting it into the dish, crimping the edges.
- Combine ½ cup peanut butter with ½ cup powdered sugar to make peanut butter crumbles.
- Whisk together sugar, cornstarch, and salt in a medium saucepan. Gradually add milk over medium heat, whisking to avoid lumps. Cook for 6-8 minutes until thick.
- In a separate bowl, beat egg yolks, then gradually whisk in hot milk mixture to temper. Pour back into saucepan and cook for 2-3 minutes.
- Remove from heat and stir in peanut butter and vanilla until smooth.
- Pour custard into cooled pie crust. If using peanut butter crumbles, sprinkle on top. Cover and chill for at least 4 hours.
- Prepare whipped cream topping by whisking heavy cream, powdered sugar, and vanilla until soft peaks form.
- Slice and serve the chilled pie with freshly whipped cream on top.
