- Wash and peel the Russet potatoes. Cut them into ¼–⅓ inch matchsticks and set aside.
- Soak the cut fries in cold water for 25–30 minutes, or up to 2 hours for better texture. Drain once soaked.
- Dry the fries thoroughly using a clean kitchen towel or paper towels.
- Drizzle the dried fries with olive oil and toss to coat. Add salt, garlic powder, smoked paprika, and black pepper. Stir well.
- Preheat the air fryer to 380°F for about 3–5 minutes.
- Spray the air fryer basket with cooking spray. Add the seasoned fries in a single layer and cook for 14–18 minutes, shaking halfway through.
- Once cooked, toss the fries with a pinch of salt and garnish with fresh parsley. Serve with your favorite dipping sauces.
