Ingredients
  

Sauce
  • 3 tablespoons light soy sauce Lower sodium alternative
  • 1 tablespoon dark soy sauce Optional for color and flavor
  • 2 tablespoons hoisin sauce Can substitute with teriyaki sauce
  • 2 tablespoons maple syrup Brown sugar can be substituted
  • 1 teaspoon garlic chili oil For spiciness, or use sesame oil
  • 3 tablespoons water To thin the sauce as needed
Tofu and Noodles
  • 14 ounces tofu Use firm or extra-firm, pressed
  • 8 ounces ramen noodles Rice noodles for gluten-free option
Vegetables
  • 2 stalks spring onion Can swap with green onions
  • 1 medium red onion Or substitute with yellow onion
  • 1 medium carrot Cut into matchsticks
  • 2 cups purple cabbage Regular cabbage as substitute
  • 1 medium red pepper Any bell pepper can be used
  • 1 cup bean sprouts Shredded cabbage can be a substitute
  • 2 cloves garlic Adjust as per taste preference

Method
 

Recipe Instructions
  1. Begin by patting the tofu dry and slicing it into bite-sized cubes. Season it with salt, pepper, garlic powder, ginger, paprika, and oil. Let it marinate for 10 minutes.
  2. Slice the red onion, carrot, purple cabbage, and dice the red pepper. Mince the garlic.
  3. Whisk together the light soy sauce, dark soy sauce, hoisin sauce, maple syrup, and water in a mixing bowl.
  4. Boil water in a pot and cook the ramen noodles according to the package directions. Drain and rinse with cold water.
  5. Heat oil in a pan over medium heat and cook the marinated tofu for 5-7 minutes until golden brown and crispy.
  6. In the same pan, stir-fry the sliced vegetables for 3-5 minutes, adding minced garlic in the last minute.
  7. Combine cooked noodles, sautéed vegetables, crispy tofu, and prepared sauce in the pan. Toss everything together over medium heat for 2-3 minutes.
  8. Serve topped with chopped spring onions, bean sprouts, sesame seeds, and drizzle with garlic chili oil if desired.
